Grilled Paloma

The Paloma, a beloved cocktail originating in Mexico, boasts a rich and storied history dating back to the mid-20th century. Legend has it that the cocktail’s creation is attributed to Don Javier Delgado Corona, a renowned bartender at the La Capilla bar in Tequila, Jalisco. It is said that he concocted the Paloma as an alternative to the Margarita, blending tequila with grapefruit soda, lime, and salt—a refreshing and tangy twist that quickly captivated locals and visitors alike. Over the years, the Paloma has evolved, with variations incorporating fresh grapefruit juice, soda water, or even agave nectar for added depth of flavor. Despite its variations, the Paloma remains a cherished classic, celebrated for its simplicity, versatility, and the vibrant spirit of Mexico it embodies.
